Our « Moulin du Bleu Argent » Leaf Vintage is a highly aromatic premium virgin olive oil with undertones of plant to the nose and palette. Its primary characteristic is an aroma made of springtime artichoke, green pepper and green plants. The olive varieties used are Picholine, Verdale, Cayon et Tanche, selected in the heart of olive orchards throughout the Gard, Vaucluse and Drôme areas. The olives are picked by hand when they are green or changing color, green and purplish. The olives are immediately processed at the Mill.
This "fruity green" olive oil is to be used raw. It gives a fresh note to salads, vegetables, raw vegetables, and enhances fish or meat carpaccios. It is also very suitable for Asian cooking.

• harvest: late November - early December
• technical data: the olives are processed immediately after they are picked by hand. The olives are then crushed, ground slowly and pressed cold. The oil thus obtained is collected through settling and decanting, and is then stored in stainless steel tanks. The oil is bottled with no filtering.
