Premium virgin olive oil - Nyons AOC

Our « Moulin du Bleu Argent » fruit Vintage is a premium virgin olive oil, a high-quality and refined oil fulfilling all the requirements of a Nyons AOC. It expresses mature aromas of black olive, spice and dried fruit. It is made exclusively with Tanche olives produced exclusively in the family orchard, located on the southern 400 meter high hillside of Nyons. They are handpicked when slightly overripe, and are immediately processed at the Mill. The oil is a "ripe fruit" oil, particularly suitable for fish and shellfish, perfect on a lightly toasted slice of bread with a sliver of truffle and a pinch of quality unrefined salt, outstanding in enhancing dishes made with saffron. Lastly, it can bring an original highlight to desserts like Pain Perdu (soaked French toast) with vanilla or a fruit pie.

• technical data: the olives are processed immediately after they are picked by hand. The olives are then crushed, ground slowly and pressed cold. The oil thus obtained is collected through settling and decanting, and is then stored in stainless steel tanks. The oil is bottled with no filtering.
